Crusty Cob

Crusty_Cob_smallAfter living in Spain for a number of years I did start to miss a nice crusty loaf so got my old Breville bread maker out and now we have a lovely warm crusty Hovis style loaf whenever we want.
I buy fresh yeast (I haven't seen dried in the shops) and basically put 2 teaspoons in for the largest loaf. I cant buy dried milk so I substitute the water and the dried milk for fresh milk. And the results are tremendous, so easy, cheap and delicious!
 

Ricote Lemon Meringue Pie

Lemon filling
Grated zest and juice of 4 large Ricote lemons
90g (3oz) corn flour
600ml (1 pint) water
4 egg yolks
175g (6oz) caster sugar
Meringue
5 egg whites
250g (8oz) caster sugar

Pastry Base
Make pastry and then wrap in cling film and chill in fridge for about 30 minutes then bake and leave to cool...
Mix the lemon zest and juice with the corn flour..bring the water to a boil then stir into the lemon mixture..return to the pan and bring back to a boil stirring until the mixture thickens..remove from heat..
Leave to cool slightly then stir in egg yolks return to a low heat and cook stirring until just simmering...Pour into the pastry shell..
Whisk the egg whites until stiff but not dry... Whisk in the sugar 1 teaspoon at a time...long process but worth it...Pile on top of the filling and spread over evenly...Bake for 45 minutes or until crisp and brown....enjoy. Written By Jane Louise
 

Cheap & Cheerful Chops

Cheap_Chops_smallChuck your seasoned, cheap, pork rib chops in a tin in the oven (about 180 degrees) for about 25 mins. Just before serving lay sprigs of cranberries (or any berry or fruit really, I get fresh cranberries and blueberries from Makro in Murcia) over the chops and add some gravy sweetened with cranberry sauce (or Mercadona do a nice Tomato Mermelade which works very well), put back in oven and further roast for about another 5 minutes.
Remove from heat, and I put a couple of sprigs of mint on for colour and serve with chips, veg, rice or pasta or whatever you fancy. No preparation, fast, cheap and very tasty!
